Ingredients
- 100 g leftover cooked basmati rice
- 50 g asparagus, trimmed and chopped into bite-sized pieces.
- 50 g fresh peas, shelled.
- 50 g canned kidney beans, drained and rinsed.
- 20 g almonds, sliced.
- 10 g each of fresh mint, cilantro, and basil, finely chopped.
- 10 g fresh ginger, grated.
- 10 g green onion thinly sliced.
- 10 g radish thinly sliced.
For the dressing:
- 20 ml olive oil
- 10 ml lemon juice
- 5 g honey
- 5 g salt
- 5 g pepper
Preparation
In a large bowl, combine the leftover cooked basmati rice, sliced almonds, chopped asparagus, fresh herbs, shelled peas, grated ginger, sliced green onion, and thinly sliced radish.
With a blender, blend together the olive oil, lemon juice, honey, salt, and pepper to make the dressing.
Pour the dressing over the rice mixture and toss until everything is well-coated.
Add the canned kidney beans and gently toss again.
Divide the mixture between two bowls and serve immediately.
