Leftover Roast Bowl

Live the day after Christmas like a Christmas.

Days before Christmas We plan menus for Christmas. We go to the markets and do the shopping. Sometimes we take more than we need. This period of the year is the period when our table is the most crowded.
However, tons of food can be wasted in many parts of the world. This recipe is made just for that. Moreover, it will transform the taste of Christmas dishes into something else. It will bring the turkey leftover from Christmas back to our table in its most delicious form.
So, we can start a new year with due respect for our world.

Ingredients

  • 200 g mashed potatoes
  • 100 g leftover cooked turkey
  • 30 g bell pepper
  • 30 g zucchini
  • 30 g sweet potato
  • 20 g cranberry sauce
  • 100 g leftover mixed greens 
  • 20 ml olive oil
  • 5 g salt
  • 5 g pepper 

 

Preparation

  • Preheat the oven to 200°C.

  • Cut the sweet potato, bell pepper and zucchini into small cubes and toss with 10 ml olive oil, salt, and pepper. Place on a baking sheet and roast until tender about 15 minutes.

  • Meanwhile, heat the leftover turkey in the oven with vegetables until warm.

  • In a pan, heat the mashed potatoes over medium heat.

  • Once everything is heated, divide the mashed potatoes between two bowls.

  • Top with the warm roasted turkey, roasted bell pepper and zucchini and sweet potato cubes.

  • Drizzle cranberry sauce over the top of each bowl and serve with greens.
