Unfortunately, their final destination from the grocery store to our kitchen is often the trash bin. So, a banana that has been plucked from its branch and traveled such a long way becomes a wasted. However, overripe bananas now have another chance. As you may know, the sweetness of bananas increases as they ripen. This is what makes them the hero of this recipe.

Ingredients

  • 2 eggs
  • 450 g aged banana (leftover) 
  • 250 g flour 
  • 150 g brown sugar
  • 115 g butter  
  • 100 ml heavy cream
  • 90 single cream
  • 50 g yoghurt
  • 25 g powdered sugar
  • 10 g baking soda
  • 5 g cinnamon powder
  • 4 ml vanilla extract 

 

Preparation 

  • Preheat the oven to 180°C.

  • Whisk the flour, baking soda and cinnamon together in a bowl. In an electric mixer, whisk the softened butter and brown sugar. 

  • Then add the eggs one-by-one. After that, add the mashed bananas, vanilla, and all cream. Then in low speed, add the dry ingredients and mix.

  • Take the mixture in a loaf pan. 

  • Bake in the oven for 40 minutes. At the same time, whip the heavy cream, yoghurt and powdered sugar.

  • Serve them together.
