Ingredients
- 80 g unsweetened shredded coconut flakes
- 50 g egg whites
- 50 g granulated sugar
- 30 g coconut oil, melted
- 20 g coconut milk
- 5 g vanilla extract
- Pinch of salt
- Crushed pistachio
For the filling;
- 30 g coconut cream
- 20 g pistachio
- 10 g honey
Preparation
Preheat your oven to 180°C. Line a baking sheet with parchment paper.
In a mixing bowl, combine the shredded coconut flakes, sugar, and salt.
In a separate bowl, whisk the egg whites with electric mixer until frothy.
Add the melted coconut oil, coconut milk, and vanilla extract to the egg whites. Mix well to combine.
Pour the wet mixture into the bowl with the dry ingredients and stir until everything is evenly combined.
Using a cookie scoop, drop rounded portions of the mixture onto the prepared baking sheet.
Bake in the preheated oven for about 15-18 minutes.
In a chopper combine coconut cream, powdered sugar and pistachio, make a filling cream. Take the cream in a piping bag.
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Inject cream into each cookie using a piping bag.
Serve with crushed pistachio on top.
