By fighting food waste and fostering social connections, these establishments go beyond nourishing the body; they also nourish the soul. In this spirit of connection, creativity, and care, Refettorios have become sanctuaries for those in need, offering hope, dignity, and a sense of belonging. In our new blog series, we celebrate the inspiring individuals who make Refettorios the life-changing spaces they are. Today, we introduce you to Arefe, a woman who found hope, purpose, and a new family at Refettorio Ambrosiano.

 

Arefe's Story: Finding a New Life Through Food

 

Arefe arrived in Italy seeking political asylum, alone and desperate for a fresh start. When she discovered Food for Soul and Refettorio Ambrosiano, her life took a dramatic turn. Through her work as a cook at the Refettorio, Arefe has not only found a new passion but also a sense of belonging and purpose.

 

Refettorio Ambrosiano has become Arefe's second home, where she has formed close connections with the guests and staff. She tells us that people don't come here just to eat; the Refettorio is like a big family, where everyone knows and respects each other. By transforming food surpluses into delicious recipes, Arefe is not only helping to fight food waste but also providing comfort and nourishment to those in need.

 

Arefe on the Impact of Refettorio Ambrosiano

 

When asked how food has saved her, Arefe shares that the Refettorio has been a lifeline for her. In her own words, "I am in political asylum, I arrived in Italy alone and desperate. I am lucky to have found this opportunity. The Refettorio is like a second home for me. Guests don't come here just to eat. It's like a big family; I know them all. Everyone respects me and thanks me. The Refettorio has helped me a lot, and now I want to help other people myself."

 

Arefe's Approach to Saving Food

Arefe is passionate about reducing food waste at Refettorio Ambrosiano. When asked what food she is saving today, she shares, "Here at the Refettorio, we don't throw any food away. Today I've received a lot of milk, and I am preparing ricotta with this. When the milk boils, I add salt, lemon, put it in the fridge, and it's ready for tonight."

 

To prevent food waste, Arefe plans meals for the entire week based on the surplus ingredients received. By carefully organizing and creatively utilizing these ingredients, she ensures that no food goes to waste.

Arefe's story is a testament to the power of food, community, and second chances. Through her work at Refettorio Ambrosiano, she has not only changed her own life but also inspired countless others.
