Ingredients

  • 4 egg yolks
  • 250 g heavy cream
  • 250 g whole milk
  • 100 g granulated sugar
  • 60 ml aromatic orange oil (recipe in the kitchen tips)

 

Preparation

  • In a mixing bowl, whisk the egg yolks and granulated sugar together with electric mixer until well combined.

  • In a saucepan, heat the heavy cream and whole milk over medium heat until it reaches a gentle simmer. Remove from heat.

  • Slowly pour the hot cream and milk mixture into the bowl with the egg yolks and sugar, whisking continuously to temper the eggs.

  • Once combined, pour the mixture back into the saucepan and return it to medium heat.

  • Cook the mixture, stirring constantly, until it thickens and coats the back of a spoon. This should take about 5-7 minutes. Do not let it come to a boil.

  • Remove the saucepan from heat and stir in the aromatic orange oil. Mix well.

  • Allow the mixture to cool to room temperature, then cover and refrigerate for at least 1 hours.

  • Once chilled, pour the mixture into a shallow, freezer-safe container.

  • Place the container in the freezer and let it freeze for about 2 hours, or until the edges start to firm up.

  • Remove the container from the freezer and vigorously whisk the mixture to break up any ice crystals that have formed. This helps create a smoother texture.

  • Return the container to the freezer and repeat the whisking process every 30 minutes for about 2-3 hours, or until the ice cream reaches the desired consistency.

  • Once the ice cream has firmed up, it is ready to be served. Scoop it into bowls and serve with more aromatic orange oil on top.
