Ingredients:

  • 2 pieces (500 g) salmon fillets, skin on

  • 200 g coarse salt

  • 200 g sugar

  • 150 ml grapefruit juice

  • 100 ml orange juice

  • 50 ml lemon juice

  • 1 grapefruit zest

  • 1 orange zest

  • 1 lemon zest

  • 1 bunch fresh dill

  • 10 g black pepper

Preparation:

● Begin by washing and drying the salmon fillets. If the skin is still on, leave it intact.

● In a blender, combine the salt, sugar, grapefruit zest, orange zest, lemon zest, and fresh dill.

● To this blend, add the grapefruit juice, lemon juice, and orange juice.

● Coat both sides of the salmon fillets with this mixture.

● Stack the salmon fillets on top of each other and place them in a container with a lid.

● Place the container in the refrigerator and allow it to rest for 2 days. Remember to flip the salmon daily and reapply the coating.

● After 2 days, take out the salmon, shake off the seasoning, and garnish the fillets with fresh dill and black pepper.

● Now, slice the salmon and serve it.
