Ingredients:
- 400g boiled octopus (two legs)
- 300 g Santorini fava beans
- 100 g shallot (red)
- 1 L of water
- 100 g red onions
- 1 lemon
- 80 g capers
- 100 ml extra virgin olive oil
- 10 g fresh oregano
- 5 g salt & pepper
- 2 cloves of garlic
- 10 g red chili pepper
Preparation
Wash the fava beans with cold water and drain.
Chop the onion, garlic, and shallot into medium-sized pieces.
Heat the pan and add 50 ml olive oil. Then add onion, garlic, and shallot and sauté for two minutes.
Add the fava peas and water; bring to a boil. Season with salt and pepper to taste. Reduce the heat and simmer the Santorini fava beans over low heat for 25 minutes, remove the foam on top. Stirring constantly, until thickened and mushy.
While the fava is boiling, prepare the octopus.
Rub the octopus well with salt, pepper, paprika and olive oil.
Preheat the oven to 200°C on grill function.
Place the octopus on a baking tray and cook for 15 minutes.
When the favas become soft, drain, and put them in a food processor. And add red chili pepper, fresh oregano, salt and olive oil.
Process in a food processor until you get a creamy texture.
Place the fava on a plate and top with the grilled octopus and capers. Serve with olive oil and fresh oregano.
