Ingredients
500 ml leftover vegetable stock (roots, peels and other vegetable waste left over from cooking).
100 g aging purple carrot
80 onions
50 g aging carrot
1 clove garlic
10 ml olive oil
10 ml coconut cream
5 g salt
5 g black pepper
5 g chili flakes
Preparation
• Chop the onions, carrots, and garlic using a chopper.
• Heat olive oil in a pot and add the chopped onion, garlic, and carrot mixture. Sauté everything for 5 minutes.
• Add vegetable stock and spices on top, then close the lid and cook the soup for 15 minutes.
• Blend the soup with a blender until it reaches a smooth texture.
