Ingredients

- 0.5 kg carrots
- 1 tbsp olive oil
- 1 tbsp honey
- ½ Tbsp red wine vinegar

- 1 kg carrots
- 2 tbsp olive oil
- 2 tbsp honey
- 1 Tbsp red wine vinegar
Method
- Heat the oven to 200C/180C fan/gas 6. Bring a large pan of water to a boil. Add the carrots, bring them back up to a boil and cook for 5 mins.
- Drain and leave in a colander to steam dry for a few minutes, and then toss in a large roasting tin with the olive oil, honey, vinegar and seasoning. Roast for 30-40 mins.
