Ingredients

  • SERVING SIZE: 2
  • 0.5 kg carrots
  • 1 tbsp olive oil
  • 1 tbsp honey
  • ½ Tbsp red wine vinegar
  • SERVING SIZE: 4
  • 1 kg carrots
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 Tbsp red wine vinegar

Method

  1. Heat the oven to 200C/180C fan/gas 6. Bring a large pan of water to a boil. Add the carrots, bring them back up to a boil and cook for 5 mins.
  2. Drain and leave in a colander to steam dry for a few minutes, and then toss in a large roasting tin with the olive oil, honey, vinegar and seasoning. Roast for 30-40 mins.
