- 3 cups apricot, dried
- 3 cups coconut, shredded
- Sweetener, optional
- Blend the apricots and coconut in the food processor until you get a paste.
- After it reaches a consistency, scoop up tablespoon-sized amounts of mixture and roll into a ball using your palms.
- If you want, you can roll it in coconut flakes, or your choice of sweetener to coat it.
- After resting for 1 hour in the refrigerator, it is ready to serve, bon appetit.
